I love Mexican food. Tacos, burritos, enchiladas, they're all avenues to get the sour cream, queso and salsa in my mouth. I LOVE Mexican food!
I LIVED on Mexican food with each of my pregnancies. Especially with my first one. I could put a #4 dinner special away like it was nobody's business. {that may have had something to do with the 60 pound weight gain with him...}
With Cinco de Mayo a mere 4 days away, I thought I would gather a few yummy recipes up for you to make for your own fiesta. Or, just make them because you love the food as much as I do. Add them to your weekly dinner menu. Or, eat them every day, I won't judge.
/1/ Tex-Mex Chicken - This is a recipe I created for Blissfully Domestic. It's a family favorite in my house. We eat it on the regular. I'd love for you to give it a try and tell me what you think. {Top it with sour cream and guac for an added umph of flavor!}
/2/ Mexican Pizza - Diva Eats the World call this one "Party on a Plate." Judging by the picture alone, I'm gonna have to agree with her!
/3/ Loaded Sweet Potato Nachos - I love me some nachos! Recently, I've also discovered my love for sweet potato chips. It only makes sense to make nachos with them. My nacho addiction just became healthy! After all, the calories are in the chips, right?!

My Interview with Author Alli Worthington #BreakingBusy
I had the opportunity to interview my friend and new author, Alli Worthington, on her new book, Breaking Busy. Here's a small bit of what you can read over at Blissfully Domestic.
What made you want to write Breaking Busy?
I wanted to help other women get off the “hamster wheel” of frazzled living. I lived for too long with the burden of a busy calendar that sucked the life out of me and I hoped to share what I learned with others.
We all spend so much time consumed with our busy schedules that we live on the edge of burnout. I reached a point in my life that I realized my crazy busy schedule was killing me. I knew I had to start breaking busy before the busy broke me!

Y'all, I LOVE FALL! The back-to-school season, the weather change, the color changes in our surroundings, PUMPKINS {!!}, Mums and Halloween. Fall is also the time to dust off your baking dishes and make homemade baked goods. Mmmm...

As Seen on Blissfully Domestic {June/July}

Are You Hiding Behind the Lens? {#MomIsHere}
Be honest. If you needed a picture RIGHT NOW of your child WITH you could you find one? Like, from yesterday or last week, not from two years ago? I didn't think so. I would've been hard-pressed to myself until a few days ago.

The Sprout Channel recently launched a campaign titled Mom Is Here. The idea is to get moms out from behind the camera and INTO the shot with her son or daughter. Us moms need more photos WITH our children. LOTS of them! Don't you agree?

Years from now, when I'm no longer here, I want my kids to be able to look back on our time together. Myself and that individual child. So, it won't be easy...but, I'm going to get out from behind my camera and take more photos WITH my kids.
Even if it's silly shots like this one...

Disney and DC. #DisneyOnTheRoad

At 5:30am on June 6th I began my journey to the

{my thoughts on DC traffic}
My ten hour drive became fourteen. Seriously though...I'm not complaining! I was at Disney On The Road with Maria Bailey and a hundred other women whom I couldn't wait to meet! {I never got to have that dessert with Dee. Instead, I enjoyed a Caesar salad from room service. After fourteen hours on the road all I wanted to do was hit the hay. Thankfully, she understood. You're awesome, Dee!}

The next morning I woke up refreshed and ready to take on the day. This would be my third time attending a conference for bloggers but, my first as an attendee. {The two years I went to BlissDom I was a staff member.}

After getting checked-in it was time to mingle while we waited for the doors to open.

Once inside, breakfast was served. If you know me, you know I don't eat any of what is on my plate. LOL Well, I did eat a few bites of the hashbrown casserole. I was SO happy their were bagels and cream cheese on the tables, along with other pastries and muffins.

This was also on the table. I refrained for a couple of hours...and then HAD to dig in!!!

After the conference was over I went over and introduced myself to Amy from Resourceful Mommy. I've been reading her blog for years. {It's always so nice to put a real face with the words you've seen on your computer screen for so long.}

Remember I said Maria was our host. I thanked her for inviting me. We got to chatting and I discovered she grew up just minutes from me. It is truly a small world after all! {see what I did there?? Disney conference, Disney reference.}
I met a few other amazing bloggers too...Stephanie of Stephanie Says, Heather of SugarNSpice-Life, Mindi of Simply Stavish, and Lisa of The Domestic Life Stylist. Each of them with their own blogging niche and personality. I had such a great day hanging out with and getting to know these girls!!!
I still haven't even shared with you the super great keynote speaker we had. Jennifer Labit of Cotton Babies, founder of Bum Genius. I would really like to save that for another post though. She was filled with inspiration and insight and information. And, if I can get Hubs on board, she totally talked me in to cloth diapering.
I can't express enough gratitude or show how flattered I was to be invited to this Disney Social Media Moms Conference. Thank you, Maria Bailey and Disney for the opportunity!
Also, thank you Blissful Media Group for sending me as a writer/curator for Blissfully Domestic. Being a part of this blissful family is such an honor. Muah!
